Spinach and Feta Stuffed Chicken Breast
This impressive dish looks fancy but is surprisingly easy to make. The combination of spinach and feta creates a delicious Mediterranean flavor.
Ingredients:
- 4 boneless chicken breasts
- 2 cups fresh spinach, chopped
- ½ cup feta cheese, crumbled
- 2 cloves garlic, minced
- ¼ cup sun-dried tomatoes, chopped
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Toothpicks for securing
Instructions:
- Preheat oven to 375°F (190°C).
- Sauté spinach and garlic until wilted. Let cool.
- Mix spinach with feta and sun-dried tomatoes.
- Cut a pocket in each chicken breast.
- Stuff each breast with spinach mixture.
- Secure with toothpicks and season outside with salt, pepper, and oregano.
- Heat oil in oven-safe skillet and sear chicken until golden.
- Transfer to oven and bake for 20-25 minutes until cooked through.
- Let rest for 5 minutes before slicing.
Be careful not to overstuff the chicken breasts, and make sure to remove the toothpicks before serving!
